Oh, Paula Deen

Bite This: Paula Deen, celebrity chef, has published a plethora of cookbooks and has appeared on numerous shows including the Oprah Winfrey show. She is a huge Food Network star and has (ahem...had) numerous endorsements with Walgreen's, Target, Sears, Wal-Mart, Home Depot,  and so on...

As you may have heard, Paula Deen is in deep for having a history of saying derogatory racial comments and a lawsuit has been filed against her from a former employee for racial discrimination. Whether or not you agree with what is currently happening to Paula, that is not what this post is about. This post is about her Ooey Gooey Butter Bars.
Not only has Paula Deen been criticized for her past indiscretion, but she has also been bashed for her high fat, high calorie, downright unhealthy recipes. And this is one of them. But this is probably the best sugary, sweet baked good that I have ever put in my mouth. I would just dress these bars up in little tuxedos and marry them if I could (but who wouldn't put me in the nut house for that?).
My husband asked me to make these one night after he suddenly remembered that his mom used to make them all of the time when he was younger. Apparently, it is a southern thing.
Now I am all for eating healthy and do not really like to endorse something that is made up entirely of butter and cream cheese, but everything in moderation, right?

So here it is:
Gooey Butter Cake (source)

Cake:
1 package yellow cake mix
1 egg                                                                                      
8 tablespoons of butter, melted (yes, 8)

Filling:
1 8 ounce package of cream cheese, softened
2 eggs
1 tsp vanilla
8 tablespoons butter, melted (yes, another 8)
16 ounces of powdered sugar

Directions: Preheat oven to 350 degrees. Combine cake mix, butter and egg and mix well. Pat the mixture in the bottom of a lightly greased 13x9 pan.
In another bowl, beat the cream cheese until smooth. Add eggs, vanilla and butter and beat together. Mix in powdered sugar. Spread over cake batter and bake for 40-50 minutes. Do not over bake as you want them to be gooey. Otherwise you just missed the point.
