I am quinoa (keen-wah)!
Great job to the two people who took a stab in the dark. Guess I made this one a little too boring and a little too easy. :) Since you both tied, there will be no prizes, but thanks for playing! Maybe next time.

Quinoa is awesome for the aforementioned health benefits, but it also tastes great. There are so many recipes that involve quinoa and it is very versatile. You can eat it for breakfast, add it to salad, serve as a side dish, etc.  Recently I have been making plain quinoa, adding garlic salt and parmesan cheese and viola! Even GMOE will eat it.
Quinoa has about 230 calories per cup (cooked) so you should probably still watch your portion size and don't go overboard, but at least you'll get great antioxidants, fiber and protein. Yum.

Here is another great quinoa recipe from Bon appetit:

Warm and Nutty Cinnamon Quinoa (PS - what is NOT to like about warm? Nutty? Cinnamon? Quinoa? - that's what I thought. )
1 cup lowfat milk
1 cup water                                                                                             
1 cup quinoa (uncooked, rinsed)
2 cups fresh blackberries
1/2 tsp ground cinnamon
1/3 cup chopped pecans, roasted*
4 tsp agave nectar

Directions: Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low, cover and let simmer for 15 minutes or until most of the liquid is absorbed. Turn off heat, let stand, covered for 5 minutes. Stir in blackberries and cinnamon. Makes 4 servings, so before serving, top with pecans and drizzle ("Can you just stop the drizzling?!" - Two points to whomever guesses where that quote is from.) 1 tsp of agave nectar.
*You can roast pecans in a 350 degree temp toaster oven for 5-6 minutes or in a dry skillet for 3 minutes.
